Soaked Scallops with palm seeds and watercress purée

Mackerel “Sotavent“ with cream of peppers and pressured shallots

Langoustines Velouté with salmoriglio oil, sorrel and shellfish biscuit

Linguine with smoked clams and Piennollo tomatoes

Poached Cod with turnip purée, anis yoghurt, parmesan and dill emulsion

Babá Napoletana with lemon curd and coconut ice cream
