Spring combination of ingredients and pleasantly fresh flavors are here. Spring has officially arrived to La Bottega Tusarova. Come and taste the new menu by head chef Honza Snopek and his team. When we talked to Honza about the new courses, it was clear that the new menu was a great pleasure for him. Like every chef, he enjoys working with quality ingredients, fresh spring vegetables, young meat and herbs. It is wonderful to see how fresh vegetables light up the taste of the whole food, give it freshness and color.
Come with us to taste two new pastes, tortelli filled with seasonal roasted vegetables, snap pea, baby carrot, onion dust and chives oil and also ravioli filled with suckling piglet meat, shallot jam, lardo foam and spring onion.
We also have the risotto with shrimps, lovage, lime and cherry tomatoes confit.
From the main courses we invite you to lamb neck with Jerusalem artichoke purée, fried mint and radishes, this meat is completely disintegrating, you can slice it with a spoon.
And the latest news is the seared tuna with hibiscus sauce, asparagus, shimeji and pine nut cream.
