We just launched a new menu and winter ingredients such as topinambur, nuts, onions and potatoes were reflected in their taste. Come and taste the new dishes to La Bottega Tusarova.
Soup made from topinambur with coconut milk. The taste of coconut beautifully works together with topinambur and adds complexity to the soup. To finish, add roasted pine nuts and brown butter to help boost the flavor of hazelnuts
Do you want to try the paccheri with veal ragout and grilled scamorza, or would you prefer the homemade gnocchi with sautéed mushrooms, sepia and wild broccoli?
Ravioli filled with olive oil emulsion with stracciatella cheese and basil oil. Delicate pasta, where you can fell the excellent quality of the ingredients.
Guinea fowl poached in butter and soté with chanterelles, spring onion, pearl onion, tarragon and demi-glacé from guinea fowl. For soften the taste we also add cream. We serve guinea fowl with potatoes grenaille and fresh tarragon.
Another novelty is grilled octopus with cod brandada and deep fried potato spaghetti. We prepare it from salty choux pastry with potatoes and some truffle oil.
Classic cheeseburger made from beef neck with Occhiato cheese, with homemade ketchup from fresh tomatoes, gherkin, sour lettuce and onion. Cheeseburger is served with potato lyonnaisse - with thyme, butter and onion.
